Who says ground turkey has to be bland?
There are quite a few steps in this recipe but some can be done simultaneously (like boiling the water while you slice and dice) And I know I promised no pictures of things cooking but it was COVID and it’s the only one!

Yummy Stuffed Green Peppers
Ingredients
FILLING
- 4 green peppers
- 8 oz ground turkey
- 2 portobello mushrooms chopped
- 3 cloves garlic minced
- 1 bunch spring onions chopped
- 1 cup bell peppers diced
- ¾ cup rice cooked
- ¼ cup cream cheese
- 1 tbspn olive oil
- 1 tspn chipoltle paprika or smoked paprika and chili flakes
- 1 tbspn worcestershire sauce
- 1 cup fresh herbs parsley, basil, thyme
- ½ cup grated cheese
SAUCE
- 4 large tomatoes diced (or a can of diced tomatoes)
- 2 tbspn tamarind sauce or balsamic vinegar
- ¼ cup water
- 1 tspn sugar
- salt and pepper
- ½ cup fresh basil or 1 tbspn dried
Instructions
- Preheat oven to 350℉
PEPPERS
- Cut the tops off the peppers and scoop our the seeds
- Add oil to skillet and brown the turkey
- Add garlic, green onion, mushroom and diced peppers and all the spices
- Once it's nicely combined, add the rice and herbs
- Add cream cheese and mix thoroughly
- Place the peppers in an ovenproof dish that allows them to stand up and not fall over
- Scoop the rice/turkey mix into the peppers
- Spoon the sauce generously over the top of the peppers and top with grated cheese (cheddar or mozzarella)
- Bake for 30 minutes – I like a little crunch in my peppers
SAUCE
- Combine all sauce ingredients in a small saucepan and cook for about 15-20mins. Add more water if necessary
