Cut the tops off the peppers and scoop our the seeds
Add oil to skillet and brown the turkey
Add garlic, green onion, mushroom and diced peppers and all the spices
Once it's nicely combined, add the rice and herbs
Add cream cheese and mix thoroughly
Place the peppers in an ovenproof dish that allows them to stand up and not fall over
Scoop the rice/turkey mix into the peppers
Spoon the sauce generously over the top of the peppers and top with grated cheese (cheddar or mozzarella)
Bake for 30 minutes - I like a little crunch in my peppers
