Shrimp & Asparagus in Spicy Orange Sauce

This is one of our favorite recipes. It’s such a good stand-by for nights when you don’t have a plan and want to eat healthily and quickly. We always buy shrimp when it’s on a deal so there’s always a couple of bags in the freezer and they thaw in half an hour under cold running water.

Shrimp and Asparagus in Spicy Orange Sauce

The "spicy" in this recipe doesn't mean HOT - it means warm and flavourful and comes from a magical mix of cumin, orange juice and chili flakes. This is a one-skillet, 30 minute start-to-finish, show-stopper.

Ingredients

  • 340 g shrimp
  • 1 bunch asparagus
  • 2 navel oranges
  • 1 med red pepper
  • 2 cloves garlic
  • 1 tspn red chili flakes
  • 1 tspn cumin
  • 1 pinch salt
  • 1 tbspn olive oil
  • 2 tbspn butter

Instructions

  • Peel and clean shrimp - get the black line OUT. Set aside in a colander to dry out.
  • Prepare asparagus - remove hard ends
  • Dice red pepper
  • Mince garlic
  • Heat skillet on medium, with 1 tbspn oil and 1 tbspn butter
  • Add garlic and cook for a minute but don't let it brown
  • Dry shrimp on paper towel and add to the pan
  • Add zest of one of the oranges
  • Once the shrimp is beginning to colour nicely, add the asparagus and diced red pepper
  • Add cumin and red chili flakes
  • Add orange juice and additional tbspn butter
  • Add salt and pepper to taste
  • I challenge you NOT to drink the juice once you're done with the shrimp and asparagus!
